Fermentation of Lulo Juice with Lactobacillus reuteri CECT 925. Properties and Effect of High Homogenization Pressures on Resistance to In Vitro Gastrointestinal Digestion

چکیده
The aim of this study was to evaluate the use lulo juice as substrate for producing a potentially probiotic beverage with Lactobacillus reuteri CECT 925. Lulo juices at two pH levels and HPH treatment have been considered effect these variables on 925 growth, physicochemical antioxidant properties, resistance microbial cells gastrointestinal digestion in vitro. Regarding growth 925, it mainly affected by medium, rectified 5.5 being most appropriated one. increased antiradical capacity juices. In general, showed good vitro conditions, reaching above 107 CFU/mL all cases. highest observed treated 150 MPa followed homogenized 100 MPa.
